Veal
We are trying something new this year. We are raising a limited quantity of humanely and naturally raised, free range veal. It has been 20 years since I have eaten veal, because of the difficulty in obtaining humanely raised meat. Now I can eat all I desire. The calves, which we get from local dairy farmers, are raised naturally by our nurse cows. The calves roam the pastures, eat grass, drink milk and otherwise do what calves do.
The first batch of veal was sold out in July. Our next batch will be ready in early September. The veal is tender and tasty. Great on the grill, but we have also made traditional Wiener Schnitzel. As we cook our way through the veal, we will post recipes that we particularly like. Please share your favorites with us and we will post them as well.
Because the veal is free range, it has a pink color (free range veal is also referred to as veal rose' for that reason) and the flavor is richer than the pasty white, anemic confined veal that is served in most restaurants.
