Our Beef
Our beef is raised naturally and sustainably. We do not use antibiotics (unless medically indicated) or growth hormones. The cattle are on pasture all year. In 2008 we shifted to 100% pasture raised.
Beef is sold in quarters. A typical quarter yields about 125 lbs of meat and should fit in two 80 quart picnic coolers. The meat is custom cut per your instructions at Galvinell's in Conowingo, Maryland. The butcher is very flexible and helpful. If you are unsure what to get, you might consider getting the 'standard' cut. If you have special requests, just ask. You will find the butcher more than willing to accomodate your request. If you are curious about what to do with the roasts, as we were, buy a crock pot and check out some of the recipes that customers have posted. Our kids now prefer a shoulder roast in the crock pot over steak!
Because the meat is raised on pasture, it is leaner than what you get in the store, so be careful not to over cook it.
